Saji-Ya uses Mitsukan suehiro grain flavored distilled vinegar in the preparation of sushi rice. We are told that distillation quite effectively removes the gluten from the vinegar. Depending on your sensitivity to gluten we want you to know that wheat is listed on the ingredient label.
