Japan stretches far from north to south and each region has its own climate and cuisine. The three main ingredients of sake, rice, water and yeast differ by region, so the character of the sake served with the local cuisine is also different. Please use these tips and notes to enjoy our selection of sake and tour the different regions of Japan, as well as all the wonderful styles of sake!

Definitions

NIGORI: Sake that has been roughly milled so there is some rice
left in the liquid. Milky in color and usually sweeter.

NAMA SAKE: “Fresh” or “raw” sake that has not been pasteurized

HONJOZO: Sake with distilled alcohol added.
A common practice, which brings out more complexity.

JUNMAI: refers to pure sake with no additives.

GINJO: refers to the level of polishing the rice receives before brewing.

DAI-GINJO: an ultra-premium product, highly polished,detailed and very refined in its style.

IZUMI-JUDAN “10th Degree” (Yamagato) A martini lover’s sake, dry
and clear with a hint of juniper, great with ikura or tobiko.

HOSHI “The Star” (California) This sake lives up to its name with
high quality and versatility.

DRAFT SAKE (Kansai region) Clean,fresh and mildly sweet, floral aromas and notes of melon.

KIKUSUI FUNAGUCHI (Niigata) Fruity aroma with a fresh full
bodied flavor and a clean finish. Served with a slice of cucumber.

YAEGAKI NIGORI “Unfiltered” (Hyogo) A well balanced creaminess
embraced by a touch of silky sweetness.

OTOKOYAMA “Man’s Mountain” (Hokkaido) Light, smooth and rich grain-like
aroma with a hint of fruity nose. Very dry saké with sharp, full-bodied taste.

ONIKOROSHI “Demon Slayer” (Shizuoka) On the palate it is both dry
and rich with a flavor that fills your mouth in a most wonderful fashion.

OKA “Cherry Bouquet” (Yamagata) Very floral forward
bouquet on this popular sake.

DEWAZASANSAN “Green Ridge” (Yamagato) Fresh and full of
zing with a pleasant tartness, a lively accompaniment to any sushi bar.

KURA NO HANA “Fair maiden” (Miyagi) Transparently light,
and touched with a sweet kiss of anise.
